Evaluation of Malting Barley Varieties in the Conditions of the Middle Ural

The intensive development of the brewing industry has led to an increase in demand for high-quality raw materials. The raw material for the preparation of beer, as is known, is barley malt, obtained from malting barley varieties and giving beer a specific taste and aroma/ About 50% of barley grown in Russia does not meet the requirements of modern brewing production, and insufficient quality raw materials are due to a limited set of varieties. Therefore, working with malting barley requires the constant introduction of new promising varieties into production. The article is devoted to comparing the productivity of malting barley varieties in the conditions of the Middle Urals and assessing their suitability for malt production, the relevance of the study is due to the fact that within the framework of import substitution, the constant introduction into production of new promising barley varieties with good grain quality suitable for brewing purposes is required.
