The article reveals that the content of vitamin C in different vegetable crops in textbooks and textbooks is not the same and sometimes very contradictory. This can be facilitated by both the methods used for conducting biochemical studies, as well as the conditions of culture cultivation, or other subjective factors. The authors conducted a brief analysis of the results of research on the biochemistry of vegetables and fruits conducted and published in recent years. For almost every vegetable crop, it is possible to find a fruit or berry crop with a similar level of vitamin C accumulation. The highest level of vitamin C accumulation was noted in black currant, for which no analogue was found among vegetable crops. The article notes that the most vitamin-rich vegetables, fruits and berries can be used in the functional nutrition of the population in ecologically unfavorable regions.
