Abstract. The article considers the main criteria for the quality and safety of food products in poultry farming according to the HACCP system. The author considers the main stages of the production technology of certain types of products used in feeding birds. The emphasis is on egg melange. The quality and safety control of the production of egg melange used in the production of food products is also considered. After analyzing a number of manufacturers, the author gives recommendations for the use of products of individual brands.
